In our region, Valle del Guadalhorce, the olive variety that is most widely grown is Manzanilla Aloreña.
Our Extra Virgin Olive Oil is a coupage (blend) of the Manzanilla Aloreña and Hojiblanca varieties harvested by hand before ripening.
We take care of the conservation conditions of the oil with this format (protecting it from light and heat,).
Mainly raw, such as: salads, bread and oil, vegetables, fish or meat steamed, grilled or baked, but always afterwards, so that the raw oil in contact with the hot food enhances the aroma of the dish, and allows us to enjoy the oil as another food.
It is recommended to preserve this type of packaging in cardboard boxes, away from light and preferably in cool places.
Our non-filtered oil has a fruity green colour, in which you can appreciate aromas of tomato, more specifically of the tomato plant called tomatera (characteristic aroma of the Manzanilla Aloreña), apple, freshly cut grass, almond shell, …, and what makes the difference in this oil is its balance between bitter and spicy, both very mild and pleasant. It is sweet on the palate, leaving a green sensation and a slight bitterness that is almost imperceptible.
